Coconut matcha pops!
I’ve tried making these frozen treats a couple of times this summer and I really like them.
- 1 can (13.5oz) coconut milk
- 2-3 teaspoons of matcha green tea powder
- 2-3 tablespoons honey (yet another way I can use my delicious honey!)
Mix together all three ingredients and pour into frozen pop molds. Stick them in the freezer for a few hours. Eat ‘em!
Tips: I had a little trouble getting some of the clumps out of the coconut milk, but otherwise everything was super easy. Also, the occasional little clump of coconut milk isn’t exactly awful! If you like, you can try a little harder than I did to get those lumps outta there.
Another thing to keep in mind is that everyone has different tastes. Before you pour the mixture into the popsicle molds; taste it! Add more honey if you like it a tad sweeter.
